I realize the subject of this post would lead you to believe that we have a secret obsession with cabbage.
That's not true, our obsession is out in the open! WE LOVE CABBAGE! The closet part, is because I cleaned out and organized my side of the closet with some tricks I'm proud of and want to share.
So now that you know the subject matter you know the truth, we are both closet and cabbage fanatics, not secret ones. (Awesome intro writing for the win!)
Another non-secret of ours, we're pretty low carb people (ok, ok, at home we are,
I'll eat any lovely bundle of carbohydrates in front of me at a restaurant, I have no shame.) So at home,
when we got a hankering for enchiladas, we had to improvise. Thanks to the internet and
a Paleo cookbook, we managed to rig up a tasty dish!
First thing's first, take stock of your ingredients. For the sauce we had:
Can -o- Green Chili
Can -o- Diced Tomatoes
Jar -o- Sun Dried Tomatoes
We threw all of this into the food processor with salt, pepper, paprika, garlic and probably some other things I'm forgetting...
Whip it up!
Maybe it's not exactly enchilada sauce, but it is tomato sauce! So, it'll do.
Next up, brown your meat of choice (we used beef) and blanch your giant cabbage leaves, taking care to leave them in tact.
Now you have a beautiful little station set up, veg - meat - cheese. What else do you need?
Now, it's time to make some tasty little pockets
You bake these bad boys in a sandwich of sauce and top with more cheese
Here it is fresh out of the oven
Oh yes, it smelled fantastic. It tasted even better! And it lasted as leftover lunches for days!
You don't need more than one of those cabbage pockets at a time, cabbage is very filling!
Except ... now that I'm reliving it... I'm hungry.
Next up: my side of the closet. I both regret and don't regret not taking a before picture ... it was rough. Take my word for it. My first step was to clear out some things, various items I don't wear or want anymore of course - but this year I realized something. Winter is a season that has it's own clothes. (Yeah, I know "Earth to Emily!" But this is honestly the first year I had that epiphany.) So I went ahead and separated out all of my favorite Winter clothes. Then I found a box.
Bonus points for special occasion/sentimental items that may never see the light of day again but I still can't bring myself to part with them.
So far, there's nothing to be proud of. In fact I'm behind the curve from the rest of the country who already knows to separate summer/winter clothing. HERE is why I'm a genius.

From the bottom up, I wrote down everything I put in that box. So, down the line, when I'm desperately seeking that purple half sweater, the dog sweater or even the Emily sweater (it's a brand, I realize they are all Emily's sweaters :-p ) I'll read this list and know they're in here!
Even more bonus points?
The box I found fits perfectly in that gap between the wall and my shoe rack.
It's not in the way of my hanging dresses
and my shoe boxes squeeze right in where they belong.

Last but not least - we've reached a couple of milestones that are worth mentioning on the ol' Blog.
Last week Dylan and I celebrated our 4th Wedding Anniversary.
My beautiful roses! And that's the only photo I have to represent said anniversary but that doesn't make it any less special!
Another milestone: this past Friday was my last day after almost 4 years at a job I loved. To say goodbye, my coworkers put together a charming and delicious pot-luck
Why leave a job you love? To try on a new one. I got a great opportunity and an excellent offer that I couldn't pass up. If I'm lucky, I'll love my new place just as much. I start tomorrow readers, universe, karma - everyone. So wish me luck, eh?
