Shop Cheap, Be Productive & Eat!

Three of my absolute favorite things. Eating (of course, I suppose the cooking part is pretty fun too.) Getting killer deals and being productive! What can I say? I'm easy to please.

You can't eat without shopping for ingredients right? And nothing gets you ready to shop like coupons
Glorious coupons! These rewards ones are fantastic because they give you 
freebies of the things you purchase most! How great is that? But they don't stop at freebies, 
they give you money off coupons for your regularly purchased items too. Combine everything, 
and you have one hell of a cheap trip to the grocery store. 


Can't beat it. 

After you've stocked up on all of the incredible deals, what's left to do but eat them? 
The first meal I'm going to share with you is another adventure in leftovers. 
What do you do when you have half a head of red cabbage becoming less than fresh, 
a leftover jar of tomato sauce and a box of mushrooms that need to be eaten ... you make spaghetti...

Now, since I also promised some productivity in this post, have a look at me cleaning up like a madwoman.

But it didn't stop at cleaning! 

Completed but not photographed since my last post:
  • Doggy Maintenance (cut their claws and gave them baths!)
  • Yard Work!
  • Kitty Maintenance (took him in to the vet for a check up) 
  • Drive through coffee at Tucson's best - Coffee Times (which is something we always do on vet trips because the vet is very close to Coffee Times)
  • Fixed Irrigation Leaks 
  • Laundrageddon (that would be a ton of loads of laundry, including all of our bed pillows, all of the couch pillows  the couch blanket and then all the clothes!)
  • Watched many episodes of Buffy The Vampire Slayer

And! We entertained a good friend of ours with a delicious meal that I have pictures of! But, first I have to tell you how the idea came about. See, Sunday morning I had one thing on my mind: PANCAKES! Rather than go out and spend money indulging on the sugary kind, we opted to stay in and make the coconut flour kind. An absolute favorite Sunday tradition of mine. 
Oh my lovely cakes, how I miss thee! 

The recipe we use calls for a small amount of coconut milk, and most of the time we just open a fresh can to accommodate that. This is when those little plastic dog food can lids come in even more handy!
An open can of coconut milk doesn't have all that long a shelf life however; so you have to use it fast. That's when we hit our cookbooks and found a fun curry recipe, and since we'd have enough to share, we invited a friend over to enjoy the meal with us. Nice how everything works out sometimes, isn't it?

First, you brown your meat of choice in a tasty onion/oil/spices mixture


Then you add the exact amount of coconut milk we had left! (How cool is that?)

Oh yes. You cover and simmer this for about 30 minutes, and it looks like this
YUM! Next you add a head of cauliflower 
Cover and cook for another 10 minutes and you get this
~so amazingly tasty!!~

After all of this, you continue doing laundry and take your clean dogs 
on a nice long walk if for no other purpose than to burn a few calories!
